  • 50 gram Candied winter melon
  • 1 No.s Egg yolk
  • As required Baking and spices
  • 200 gram Cake Flour
  • 60 gram Caster sugar
  • 25 gram Icing sugar
  • 68 gram Lard/butter
  • 70 gram Rice flour, cooked glutinous
  • 1 pinch Salt
  • 15 gram Sesame seeds, white toasted
  • As required Nuts and seeds
  • 12 gram Desiccated coconut
  • As required Dairy liquids
  • 25 gram Butter
  • 40 gram Water

  • STEP 1.Baking steps filling
  • STEP 2.Put all ingredients into a big bowl, mix till well combined.
  • STEP 3.Divide filling into 12 equal portions.
  • STEP 4.Water dough
  • STEP 5.Rub butter into sieved flour and icing sugar till bread crumb state.
  • STEP 6.Add in water till a pliable dough is formed.
  • STEP 7.Cling wrap dough and rest for 30 - 45 minutes.divide dough into 12 equal portions.
  • STEP 8.Oil dough
  • STEP 9.Rub shortening into flour till well mixed. Cling wrap and leave it aside to rest for 30 - 45 minutes.
  • STEP 10.Divide dough into 12 equal portions. Flatten a piece of water dough and wrap in the oil dough.
  • STEP 11.Press and roll out dough into a longish flat piece with a rolling pin.roll it up swiss roll.
  • STEP 12.Turn the dough 90 degrees and then roll it into a longish flat piece.
  • STEP 13.Roll it up swiss roll-style again.
  • STEP 14.Pinch the 2 side edges and shape it into a flat circular shape. Put a piece of filling in the centre of the dough and wrapped it.
  • STEP 15.Flatten it and make 2 snips into the dough using a pair of scissors. Apply egg wash.
  • STEP 16.Bake in a preheated oven at 200°c for 20–25 minutes or until golden brown.
