Locro de papa is a classic Ecuadorian potato and cheese soup. Soups are very popular in Ecuador and usually served with most meals. Traditional locro uses a local, starchy potato that breaks down well into a soup or stew. The potatoes are then blended with milk and local cheese to create a simple but tatsy dish. In Eucador the soup is very popular and is served with most meals, typically as a first course befre the main course of meat.

Ingredients for Locro Soup Recipe

  • 10 No.s medium sized potatoes peeled and chopped into small and large pieces
  • 2 tablespoon Oil
  • 1 No.s white onion diced
  • 2 No.s garlic cloves minced
  • 2 teaspoon cumin
  • 1 teaspoon achiote powder
  • 7 cup Water
  • 1 cup milk or more
  • 1 cup grated or crumbled cheese quesillo, queso fresco, mozzarella or monterey jack
  • bunch A cilantro leaves only, minced
  • As required Salt
  • As required To serve
  • 1 cup queso fresco feta cheese, or grated mozzarella
  • As required A few Maiz tostado or cancha corn nuts
  • As required A few Chopped cilantro and green onions
  • As required A few Avocados sliced or diced

Directions: Locro Soup Recipe

step 1

  • STEP 1.Prepare a refrito or base for the soup by heating the oil over medium heat in a large soup pot; add the diced onions, minced garlic cloves, cumin, and achiote powder. Cook, stirring frequently, until the onions are tender, about 5 minutes.

step 2

  • STEP 1.Add the potatoes to the pot and mix until they are coated with the refrito. Continue cooking for about 5 minutes, stirring a every couple of minutes.

step 3

  • STEP 1.Add the water and bring to boil, cook until the potatoes are very tender. Use a potato masher to mash the potatoes in the pot, don’t mash all of them, the consistency of the soup should be creamy with small tender chunks of potatoes.
