Locro is a thick stew from the Andes region and that is not only a traditional dish in Peru, but also in Argentina, Bolivia and Ecuador. Its ingredients vary according to the region from which it is prepared. In Peru, it is made with squash, potatoes, corn and cheese. The original name was rocro in Quechua, The basic version is a pumpkin stew with potatoes and chilli peppers with corn kennels, beans, broad beans and onion. Lacro de zapallo is a hearty stew.

Ingredients for Locro De Zapallo Recipe

  • 1.50 kilogram seedless and crustless yellow squash, cut up into small thin strips
  • 4 No.s potatoes largely choppe, peeled or well washed
  • 2 No.s andean corn in slices
  • 1/2 cup Peas
  • 1 No.s red onion finely chopped
  • 4 No.s garlic cloves peeled and finely chopped
  • 1/2 cup fresh cheese
  • 1/2 cup evaporated milk
  • 0.33 cup Oil
  • As required Salt and pepper
  • 2 branches huacatay, leafless
  • 1/4 cup finely chopped huacatay leaves

  • STEP 1.1 - heat some oil in a pan and saute onions and garlic in it.

step 3

  • STEP 2.2 - season it with salt and pepper.

step 4

  • STEP 3.3 - now add squash, corn, peas and potato in it.

step 5

  • STEP 4.4 - add huacatay branches and cook at low flame for 30-40 minutes.

step 6

  • STEP 5.5 - once cooked add cheese, huacatay leaves and milk to it.

step 7

  • STEP 6.6 - cover and cook for 2-5 minutes.
