STEP 1.Wash and soak 2 cups of lobia (black eye beans) for 30 minutes. Pressure cook for 3 to 4 whistles or 10 minutes.

STEP 1.In a preheated pan add 1 tsp olive oil, add1 tsp cumin seeds, 1 inch stick cinnamon (dalchini). Saute for a few seconds. Then add 1 finely chopped onion, 1 green chilli chopped, 1 inch ginger finely chopped, 3 cloves garlic finely chopped. Saute till onions soften.

STEP 1.Turn heat to low and add ½ cup tomato puree, ½ tsp turmeric (haldi) powder, 1 tsp red chilli powder, 1 tsp coriander (dhaniya) powder, salt to taste, 1 tsp garam masala powder, 2 cups cooked lobia.

STEP 1.Stir well, cover and simmer for 4 to 5 minutes. Lastly add 1 tsp jaggery and mix well. Turn off the heat. Serve lobia with Phulkas and salad.
