How to Make Llapingachos Recipe

STEP 01

1 boil the potatoes in a pan until they become tender.

STEP 02

2 heat in a pan over medium flame and add the onions and achiote, cook until the onions become translucent.

STEP 03

3 mash the potatoes with a potato masher and mix in the onion refrito and salt.

STEP 04

4 cover the potato dough and let it sit for about an hour.

STEP 05

5 make small balls out of the potato dough.

STEP 06

6 make a hole in the centre of each ball and fill it with the grated cheese.

STEP 07

7 make a thick pattie out of it and refrigerate for ½ to 1 hour.

8 Heat oil in a pan and deep fry your patties until they turn golden brown from all the sides.
