Llapingachos are a traditional Ecuadorian dish of potato patties or thick potato pancakes stuffed with cheese and cooked on a hot griddle until crispy. En espaol. Llapingachos, also called yapingachos, are typically served as a side dish for many Ecuadorian main courses. Llapingachos are a great breakfast and dinner dish and can be served on their own as an appetizer or even as a full meal accompanied by tasty peanut sauce or salsa de mani.

Ingredients for Llapingachos Recipe

  • 5 No.s Russet Potatoes
  • 2 tablespoon sunflower or avocado oil
  • 1/2 cup finely chopped white onion
  • 2 teaspoon ground achiote
  • 1 cup grated quesillo or mozzarella cheese
  • As required Salt

Directions: Llapingachos Recipe

step 1

  • STEP 1.1 boil the potatoes in a pan until they become tender.

step 2

  • STEP 2.2 heat in a pan over medium flame and add the onions and achiote, cook until the onions become translucent.

step 3

  • STEP 3.3 mash the potatoes with a potato masher and mix in the onion refrito and salt.

step 4

  • STEP 4.4 cover the potato dough and let it sit for about an hour.

step 5

  • STEP 5.5 make small balls out of the potato dough.

step 6

  • STEP 6.6 make a hole in the centre of each ball and fill it with the grated cheese.

step 7

  • STEP 7.7 make a thick pattie out of it and refrigerate for ½ to 1 hour.

step 8

  • STEP 1.8 Heat oil in a pan and deep fry your patties until they turn golden brown from all the sides.
