Ingredients for litti chokha katori Recipe

  • 1 cups Aashirvaad Whole wheat flour –
  • As required Aashirvaad Salt – ½ tsp
  • As required Ajwain (carom seeds) – ½ tsp
  • 1 tbsp Aashirvaad Ghee – (for dough)
  • As required Water – as needed
  • As required For stuffing:
  • 1/2 gram Sattu (roastedflour) –
  • 1/2 nos Onion – medium (finely chopped)
  • 4.50 nos Garlic – – cloves (grated or minced)
  • 1/2 tsp Ginger – (grated)
  • 1.50 nos Green chilli – – (finely chopped)
  • 1 tbsp Coriander leaves – (chopped)
  • 1 tbsp Lemon juice / amchur powder – /
  • As required Kalonji (nigella seeds) – ¼ tsp (optional)
  • 1/2 tbsp Mustard Oil –
  • As required Salt – to taste
  • As required For chokha:
  • 1/2 nos Brinjal – large (roasted)
  • 1 nos Tomato – (roasted)
  • 1 nos Boiled potatoes – medium
  • 3.50 nos Garlic – – cloves (roasted with skin)
  • 1.50 nos Green chilli – – (chopped)
  • 1/2 tbsp Mustard Oil –
  • 1 tbsp Coriander leaves – (chopped)
  • As required Aashirvaad Salt to taste

Directions: Litti Chokha Katori Recipe

  • STEP 1.Mix wheat flour, ajwain, salt, and ghee.
  • STEP 2.Add water little by little, knead a medium-soft dough. Rest for 20 mins.
  • STEP 3.Mix sattu with onion, garlic, ginger, chilli, coriander, lemon juice/amchur, kalonji, mustard oil, and salt.
  • STEP 4.Adjust spice & tanginess to taste.
  • STEP 5.Grease small steel/aluminium katoris with oil.
  • STEP 6.Roll small dough balls, flatten, and press into the katori to form a cup shape.
  • STEP 7.Fill with 1–2 tsp stuffing.
  • STEP 8.Cover with a thin layer of dough to seal.
  • STEP 9.Repeat for all katoris.
  • STEP 10.Oven: Preheat to 200°C, bake katoris (with dough) for 20–25 mins till golden brown.
  • STEP 11.Air fryer: 180°C for 15–20 mins.
  • STEP 12.Once cooked, gently tap to unmould from katori. Brush with ghee.
  • STEP 13.Roast brinjal, tomatoes, and garlic on open flame / oven until skin is charred.
  • STEP 14.Peel skin, mash with potatoes.
  • STEP 15.Add salt, green chilli, mustard oil, and coriander. Mix well.
  • STEP 16.Serve hot litti katori brushed with ghee, alongside smoky chokha and green chutney.
