STEP 1.Bake the vegetables in low flame and cool it down. Then, smash it and add all the ingredients to make the chokha.
STEP 2.*Signature chutney must be used here!
STEP 3.Take aashirvaad atta, add hing water, salr, ajowan, ghee. Make a soft dough. Brush it with ghee/oil and keep it in rest for half an hour.
STEP 4.For a twist, I cooked a signature chutney with dry chilli, garlic, home made mango kasundi, Salt, oil, water and sugar.
Make a smooth paste by mixing it in all the ingredients and. Saute it in a fry pan.
To make the green chutney, take the coriander, chilli, lemon huce, garlic cloves, cumin powder, salt and sugar. Grind it well and prepare for the chutney next.
Take chaatu, oil, salt, cumin powder, signature chutney, onions, and a little bit of water. Smash it well for the stuffing.
STEP 5.From the dough, roll some of it into balls and fill it with the stuffing. Then, bake it on gas (on a net) in low flame until cooked. Flip it over for 2 minutes each and brush the ghee on the surface.
STEP 6.When it is ready, serve it with ghee, chokha, green chutney and ofcourse, spread it with the twist!
