A spicy tangy curry of tofu with courgette and red pepper simmered in lime juice, red curry paste and coconut milk and seasonings. This is a quick and tasty sweet and sour dish. I like to marinate the tofu in the same sauce used on the dish, and then bake it at 375 degrees for 20 minutes it makes the tofu really take on the flavor of the sauce.   • 400 piece Tofu cut into bite size gm
  • 2 tablespoon Red curry paste
  • 3 tablespoon Peanut oil
  • 10 gram Ginger finely chopped
  • 1 piece Red pepper chopped into small bite Nos
  • 1 gram Courgette diced into cm cubes 300
  • 3 tablespoon Lime juice
  • 15 gram Basil finely chopped
  • 2 tablespoon Maple syrup
  • 3 tablespoon Light soy sauce
  • 400 milliliter Coconut milk
  • As required Salt

How to Make Lime-curry Tofu Stir Fry Recipe

STEP 01

Heat 2 tbsp oil in a pan and add 400 gm tofu cut into bite size pieces.

Fry on medium heat till golden. Then remove the pan and drain.

Into the same pan add 300 gm courgette cut into 1 cm cubes, 1 red pepper cut into small bite size pieces and stir fry for 2 minutes.

Heat the remaining 1 tbsp oil and add 2 tbsp red curry paste, 10 gm finely chopped ginger. Stir fry for a few minutes.

To this add 3 tbsp light soy sauce, 2 tbsp maple syrup, 3 tbsp lime juice. Stir well.

Then add the fried tofu to the pan along with 400 ml coconut milk and turn the heat to low.

Stir gently and allow the curry to simmer for 2 minutes.

Add the sauteed courgette and red pepper and stir. Add salt to taste. Allow to cook for 1 minute.
