  • 900 gram beef tripe washed and cleaned
  • 1 No.s Lemon juice
  • 10 cup Water
  • 5 No.s cilantro sprigs
  • 4 No.s garlic cloves crushed
  • 2 teaspoon ground cumin

  • 2 cup Milk
  • 3 tablespoon Butter
  • 1 cup diced red onion about 0.5 red onion
  • 2 cup diced white onion about 1 whole white onion
  • 1/2 No.s bell pepper diced
  • 1 No.s tomato peeled, seeded and diced
  • 4 No.s garlic cloves minced
  • 2 teaspoon achiote or annatto powder
  • 1 teaspoon Oregano
  • 4 No.s medium sized potatoes peeled and diced into small squares

How to Make Librillo Recipe

step 1

STEP 01

cover the tripe with juice from half of the lemon, water and salt, let rest for 10 minutes and repeat. Rinse well the last time.

STEP 01

in a large stock pot, cover the tripe with 10 cups of water, cilantro sprigs, garlic, salt, and cumin, bring to a boil, reduce temperature and simmer until tender, about 2 hours, drain and save 2 cups of the broth.

STEP 01

mix the peanut butter with ½ cup of milk to soften it (so that it mixes in better later).

step 4

STEP 01

dice the tripe into small pieces.

step 5

STEP 01

prepare a refrito with the butter, achiote, cumin, salt, oregano, chopped onion, bell pepper, tomato and garlic, cook until the onions are translucent and soft, about 5 minutes
