  • 1 cup Chicken Broth
  • 1/2 cup Water
  • 1/2 Boneless, Skinless Chicken Breasts
  • 1/2 cup Cooked Rice
  • 1/2 tablespoon Soy Sauce
  • 1/4 tablespoon Fish Sauce
  • 1/4 Juice Lime
  • as needed Fresh Cilantro, For Garnish

Cooking Directions

  • STEP 1.In a large pot, heat oil over medium heat. Add chopped lemongrass, garlic, and ginger, and sauté for 2-3 minutes until fragrant.
  • STEP 2.Add chicken broth, water, and chicken breasts to the pot. Bring to a boil, then reduce heat and simmer for 20-25 minutes until chicken is cooked through.
  • STEP 3.Remove chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.
  • STEP 4.Add cooked rice, soy sauce, fish sauce, and lime juice to the pot. Stir well and simmer for another 5 minutes to allow the flavors to meld together.
