#Bread 🍞 An unique way to use the leftovers- All at one go- My Parathas were yesterday’s leftovers & even the Dry Sabji too…The only tweak that’s been given to it is the addition of a couple of eggs and we’re good to go FYI: This particular recipe can also be done afresh instead of using any leftovers… Since, I did have some from the previous night, hence the idea cropped up to fruitfully & tastefully utilise the same & that too, without compromising on its deliciousness !!!

Ingredients for Leftover Paratha & Sabji Spring Rolls Recipe

  • As Required For the Paratha SpringRolls
  • As Required For the filling
  • 3/4 g Eggs: To scramble along with the Leftover Sabji
  • 0.13 cup Fresh Coriander Leaves: Finely Chopped
  • to taste Salt
  • 0.13 cup Onions: finely chopped
  • 1/2 g 2-3 g
  • 1/4 tbsps 1-2 tbsps
  • 0.13 cup 1/2-1 Cup
  • as required Cooking Oil: To Shallow Fry the Paratha Spring Rolls
  • As Required arnish: Your Way

Directions: Leftover Paratha & Sabji Spring Rolls Recipe

  • STEP 1.Firstly: Heat up a frying pan over the medium flame & slightly warm up the leftover Parathas- Set Aside, once that’s done
  • STEP 2.In another pan or using the same: Add in some oil/ghee to it & then, in goes the chopped onions & green chillies & sauté-
  • STEP 3.Then break open the eggs- One by one & scramble it nicely-
  • STEP 4.Once done: Add in the leftover Sabji to it now & continue sautéing until it’s all nicely combined and well blended together- Put off the flame now
  • STEP 5.Next: On the clean kitchen platform or any similar smooth & even surface- Place the warm parathas one at a time & apply on its top with some chilli-tomato ketchup & next fill in it with our prepared leftover Sabji-Eggs fillings & roll it perfectly as much as is possible without tearing it much & shallow fry
  • STEP 6.Heating up a concave tawa or a frying pan over the medium flame: Add in some more oil to it & shallow fry the Rolls, nicely until golden browned from both the sides-
  • STEP 7.We need to flip it over once its one side is done to avoid repeated flipping & hence more chances of breaking it in the process- To be flipped over just once correctly
  • STEP 8.Once that’s done transfer it all to the serving plate/platters-
  • STEP 9.Garnish it your own way- Relish this DELISH with your favourite dips/sauces/achars as in the aptly suited condiment to it...💁‍♀️
