A wonderful fusion of british game and lebanese flavours, stosie madi's dish of spatchcocked grilled partridge comes accompanied by beautiful pink-pickled beetroot and turnip, along with some sourdough sesame flatbreads. A fantastic recipe that can be easily tweaked to feature different game birds (or even chicken, if game is out of season).
