Cooking Directions

  • STEP 1.In a mixing bowl, combine all-purpose flour, salt, and ghee. Gradually add water and knead into a smooth dough.
  • STEP 2.Divide the dough into small balls and roll out each ball into a thin circle.
  • STEP 3.Brush each circle with ghee or oil and sprinkle with flour. Stack the circles on top of each other.
  • STEP 4.Roll out the stacked circles into a large thin sheet. Cut the sheet into squares or triangles.
  • STEP 5.In a pan, heat oil and add cumin seeds. Once they splutter, add ginger-garlic paste and saut茅 until fragrant.
  • STEP 6.Add boiled and mashed potatoes, peas, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  • STEP 7.Cook the filling for a few minutes until the flavors are well combined. Remove from heat and let it cool.
  • STEP 8.Place a spoonful of the filling on each square or triangle of pastry. Fold the pastry over to form a triangle or square shape.
  • STEP 9.Seal the edges by pressing them together with a fork. Repeat with the remaining pastry and filling.
  • STEP 10.Heat oil in a deep pan and fry the samosas until they turn golden brown and crispy.
  • STEP 11.Remove from the oil and drain on a paper towel to remove excess oil.
  • STEP 12.Serve the layered samosas hot with chutney or ketchup.
