Lauki Kofta Curry Recipe

Lauki kofta curry is a popular North Indian dish made with bottle gourd dumplings cooked in a flavorful tomato-based gravy. The koftas are made by mixing grated bottle gourd with besan (gram flour) and spices, then deep-fried until golden brown. The koftas are then simmered in a rich and tangy tomato gravy, which is spiced with aromatic spices like cumin, coriander, and garam masala. This dish is a perfect combination of soft and melt-in-your-mouth koftas with a delicious curry, making it a comforting and satisfying meal.

Directions: Lauki Kofta Curry Recipe

Cooking Directions

  • STEP 1.Grate the bottle gourd and squeeze out the excess water. Mix it with besan, ginger-garlic paste, red chili powder, turmeric powder, and salt to make the kofta mixture.
  • STEP 2.Shape the mixture into small balls and deep fry them until golden brown. Drain on a paper towel to remove excess oil.
  • STEP 3.In a separate pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and cook until golden brown.
  • STEP 4.Add ginger-garlic paste and sauté for a minute. Then, add tomato puree, red chili powder, turmeric powder, coriander powder, and garam masala. Cook until the oil separates from the masala.
  • STEP 5.Add water and salt to the masala and bring it to a boil. Once it starts boiling, reduce the heat and add the fried koftas. Simmer for 10-15 minutes until the koftas absorb the flavors of the curry.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or roti.

Cooking Tips

  • Make sure to squeeze out the excess water from the grated bottle gourd to prevent the koftas from becoming soggy.
  • You can add a pinch of baking soda to the kofta mixture to make them extra soft and fluffy.
  • For a healthier version, you can also bake the koftas instead of deep frying them.
  • Adjust the spice levels according to your preference by adding more or less red chili powder and garam masala.
