Cooking Directions

  • STEP 1.Grate the bottle gourd and squeeze out the excess water. Mix it with besan, ginger-garlic paste, red chili powder, turmeric powder, and salt to make the kofta mixture.
  • STEP 2.Shape the mixture into small balls and deep fry them until golden brown. Drain on a paper towel to remove excess oil.
  • STEP 3.In a separate pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and cook until golden brown.
  • STEP 4.Add ginger-garlic paste and sauté for a minute. Then, add tomato puree, red chili powder, turmeric powder, coriander powder, and garam masala. Cook until the oil separates from the masala.
  • STEP 5.Add water and salt to the masala and bring it to a boil. Once it starts boiling, reduce the heat and add the fried koftas. Simmer for 10-15 minutes until the koftas absorb the flavors of the curry.
  • STEP 6.Garnish with fresh coriander leaves and serve hot with rice or roti.

Cooking Tips

  • Make sure to squeeze out the excess water from the grated bottle gourd to prevent the koftas from becoming soggy.
  • You can add a pinch of baking soda to the kofta mixture to make them extra soft and fluffy.
  • For a healthier version, you can also bake the koftas instead of deep frying them.
  • Adjust the spice levels according to your preference by adding more or less red chili powder and garam masala.

Storage and Serving

  • Lauki kofta curry can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the curry in a pan or microwave before serving.
  • Serve the lauki kofta curry with steamed rice, jeera rice, or roti for a complete meal.
