Directions: Lauki Ki Barfi: Traditional Indian Sweet Made With Bottle Gourd And Khoya Recipe

  • STEP 1.Peel the lauki, cut it lengthwise and then remove the soft, seedy centre. Grate the firm flesh and squeeze out the excess water.
  • STEP 2.In a heavy-bottomed pan, heat 1 tbsp ghee and add the grated lauki to it. Cook it over a medium flame for about 8 to 10 minutes, mixing it regularly, until the raw smell fades and the lauki turns soft.
  • STEP 3.Add milk to this and mix everything well. Cook it over a medium flame until most of the milk is absorbed and the lauki turns soft.
  • STEP 4.Add sugar and cook it again until the mixture turns thick. The sugar will release some of its moisture, so continue cooking until the excess liquid vanishes and the mixture begins to come together.
  • STEP 5.Add the crumbled khoya, remaining ghee, cardamom powder and milk powder, if you are using. Mix it thoroughly and then cook until the mixture turns thick, fudgy and starts to leave the sides of the pan.
  • STEP 6.Add the chopped almonds, cashews, pistachios and saffron or rose water. Mix everything nicely and cook for another 2–3 minutes, then switch off the flame.
  • STEP 7.Grease a flat tray or thali with a little ghee and then transfer the mixture to it. Spread it evenly and smooth the surface with the help of a spatula.
  • STEP 8.Sprinkle extra chopped nuts on top and then gently press them into the surface. Let the barfi cool down thoroughly and then cut it into squares or diamonds.
  • STEP 9.Serve at room temperature or chill for a short time to get a firmer texture. Store the barfi in an airtight box in the refrigerator.
