A bengali recipe of lau made with spices . This recipe is a traditional Bengali one. Shukto is a favorite Bengali palate cleanser, made with a lot of different vegetables including at least one bitter veg, simmered with a hint of sugar and milk to bring out the bitterness of the fresh vegetables. In this preparation lauki is taking place of the bitter vegetable. Hence the name lau shukto.

Ingredients for Lau Shukto Recipe

  • 10 gram Poppy seeds
  • 5 piece bori
  • 35 gram ginger paste
  • 22 gram Salt
  • 20 gram Sugar
  • 25 gram Milk
  • 1/4 teaspoon Flour
  • 2 piece bay leaves
  • 1/2 teaspoon mustard seeds
  • 5 gram Ghee
  • 250 gram Lau
  • As required Vegetable Oil

Directions: Lau Shukto Recipe

  • STEP 1.Grind the soaked poppy seeds

  • STEP 2.Cut the lau into slices

step 3

  • STEP 3.Heat a pan

step 4

  • STEP 4.Add the lau and salt with water

step 5

  • STEP 5.Mix well and steam for 8 mins

step 6

  • STEP 6.Reserve it in a bowl

step 7

  • STEP 7.Heat the pan with vegetable oil

step 8

  • STEP 8.Add bori and fry until golden, set aside

step 9

  • STEP 9.Temper with bay leaves and mustard seeds

step 10

  • STEP 10.Add ginger paste and fry on low heat

  • STEP 11.Add the steamed lau and mix well

step 12

  • STEP 12.Add sugar and salt

step 13

  • STEP 13.Add the poppy seeds paste and mix well

step 14

  • STEP 14.Cook for 5mins

step 15

  • STEP 15.Make a mixture of flour and milk

step 16

  • STEP 16.Add the mixture and mix well

step 17

  • STEP 17.Add the bori and ghee

step 18

  • STEP 18.Mix well, turn off heat and steam for 2 mins

  • STEP 19.Serve as a side dish to rice
