Lapsi/Kansar is traditional Gujarati sweet. It is specially made in all auspicious occasions like marriage, innaugration etc. In every Gujarati marriage , Kansar is needed in one of the most important ritual. Hardly any Gujarati is unaware of special marriage song for this ritual and sweet. लाडो लाडी जमे रे कंसार, कंसार केवो मिठो लागे.. It is said that wedding couple eats this kansar and their future life will be sweet like this kansar.

Ingredients for Lapsi / Kansar Recipe

  • 1/4 Cup coarse wheat flour
  • 1/4 Cup ghee
  • 0.13 Cup powdered sugar
  • 0.06 Cup jaggery ( chemical free )

Directions: Lapsi / Kansar Recipe

  • STEP 1.1. Warm less than 3/4 cup water and melt jaggery in it.
  • STEP 2.Add 1/2 tsp ghee in it.
  • STEP 3.2. Now add ghee in coarse wheat flour and mix in crumbly texture. Add ghee in flour until the wheat flour forms a fistful formation as per image.
  • STEP 4.3. Add prepared jaggery mixture in wheat flour and mix well.
  • STEP 5.4. Now pressure cook it for 3 whistles. Once it cools down completely, break it with hand.
  • STEP 6.5. Then add powdered sugar and ghee and mix well and serve.
  • STEP 7.Note:
  • STEP 8.1. You can replace oil with ghee in step 2.
