A comforting, delicious and wholesome stew of tender lamb pieces slow cooked with dumplings, vegetables and seasoning.This slow-cooked lamb one-pot is made with lamb shoulder, red wine and root vegetables, to impart extra sweetness. It’s ever so good as it is, but the herby fluffy dumplings on top make it that extra bit special.

  • As required Ingredients for stew
  • 1.50 inch Lamb shoulder or leg, chopped into s with bone 2 lb
  • 2-4 teaspoon Black pepper powder
  • 1.17 tablespoon Salt
  • 3 Ginger large slices Nos
  • 1-2 tablespoon Garlic chopped
  • 1.50 inch Carrots chopped in large chunks 2 Nos
  • 1 Red pepper cut in large chunks Nos
  • 2 inch Celery stalks cut in s 2
  • 3 Potatoes cut into large chunks Nos
  • 2 tablespoon Soy sauce
  • 1 cup Button Mushrooms Halved
  • 4-5 tablespoon Cornstarch
  • 3/4 cup Water
  • As required Ingredients for dumplings
  • 1 cup Flour
  • 1/2 teaspoon Salt
  • 1.75 teaspoon Baking powder
  • 1/2 cup Water
  • 2 tablespoon Butter

Directions: Lamb Stew With Dumplings Recipe

step 1

  • STEP 1.1 cut 2 lb lamb shoulder or leg, into 1 ½ inch pieces.

step 2

  • STEP 2.2 add the pieces of lamb to a pot of boiling water and par boil for 1 to 2 minutes to remove impurities. Remove from the water and drain. Keep aside the lamb. Discard the water.

step 3

  • STEP 3.1 preheat a wok on medium heat and add 2 lb chopped lamb pieces with bone.

step 4

  • STEP 4.2 sear on each side for 2 to 3 minutes.

  • STEP 5.3 add 2 tsp black pepper powder, ½ tsp salt and mix. Stir fry till the lamb is well seared.

  • STEP 6.4 transfer the seared lamb pieces to a slow cooker and add 8 cups of water. (depending on the capacity of the slow cooker). The water should cover the lamb.

  • STEP 7.5 add 3 large slices of ginger, 1 to 2 tbsp chopped garlic, 2 carrots chopped in big chunks, 1 red pepper cut in large chunks, 2 stalks of celery cut in big chunks, 1 tsp black pepper powder, 1 tbsp salt, 3 potatoes cut into large chunks, 2 tbsp soy sauce and mix well.

  • STEP 8.6 cover and cook on high heat for 4 hours or low heat for 6 hours. Or adjust the timing to cook till the meat is tender.

  • STEP 9.7 at the last 30 minutes add 1 cup halved button mushrooms.

  • STEP 10.8 for the dumplings, in a bowl add 1 cup flour , ½ tsp salt, 1 ¾ tsp baking powder and stir.

  • STEP 11.9 add ½ cup water in batches, stirring continuously. Add 2 tbsp butter and continue to mix with a ladle till the flour comes together to make a loose sticky dough.

  • STEP 12.10 when the stew has been cooking for about 3 ½ hours spoon the dumpling batter into the stew. The given quantities will make 9 large dumplings.

step 13

  • STEP 13.11 cover and continue to cook. After 15 minutes turn the dumplings over.

step 14

  • STEP 14.12 keep a check on the lamb.

step 15

  • STEP 15.13 when the meat is cooked and tender, mix 4 to 5 tbsp of cornstarch with 3/4 cup of water to make a smooth mixture.

step 16

  • STEP 16.14 add this cornstarch water to the stew and stir till the stew thickens.

step 17

  • STEP 17.15 then check for seasoning and adjust accordingly.

  • STEP 18.16 lamb stew with dumplings is ready.
