Cooking Directions

  • STEP 1.Preheat the oven to 180°C (350°F).
  • STEP 2.Season the lamb shanks with salt, pepper, and your choice of herbs and spices.
  • STEP 3.Place the lamb shanks in a roasting pan and cover with foil. Roast in the preheated oven for 3-4 hours, or until the meat is tender and falling off the bone.
  • STEP 4.Remove the lamb shanks from the oven and let them cool slightly. Shred the meat using two forks, discarding any bones or excess fat.
  • STEP 5.Lay out a sheet of filo pastry and brush it with melted butter. Place a portion of the shredded lamb in the center of the pastry and roll it up tightly, tucking in the sides as you go.
