Cooking Directions

  • STEP 1.Preheat the oven to 350°F (175°C).
  • STEP 2.In a large oven-safe pot, heat some oil over medium heat. Add the lamb and cook until browned on all sides.
  • STEP 3.Remove the lamb from the pot and set aside. In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened.
  • STEP 4.Add the garlic, rosemary, and thyme to the pot and cook for another minute.
  • STEP 5.Return the lamb to the pot and pour in the beef stock. Bring to a simmer and cover with a lid.
  • STEP 6.Transfer the pot to the preheated oven and cook for 2 hours, or until the lamb is tender.
