A bengali traditional recipe of mixed vegetables with spices Labra is cooked with different vegetables. Initially Gorbho Mocha was a mandatory ingredient while these days at least when cooked commercially, garbha mocha (Banana Flower) and thor (banana stem) are not used while making Labra. Aloo aka Potato, as well as tomato, are late inclusion as well.

Ingredients for Labra Tarkari Recipe

  • 280 gram Potato
  • 240 gram sweet potato
  • 280 gram gathi kochu
  • 500 gram brinjal
  • 220 gram unripened banana
  • 240 gram banana stem
  • 200 gram cauliflower
  • 450 gram Cabbage
  • 150 gram sheem
  • 120 gram borboti
  • 700 gram kumro
  • 350 gram mustard oil
  • 6 piece dried red chillies
  • 6 piece bay leaves
  • 2 teaspoon panch phoron
  • 24 gram green chillies
  • 70 gram ginger paste
  • 150 gram grated coconut
  • 6 gram Turmeric

Directions: Labra Tarkari Recipe

step 1

  • STEP 1.Cut and wash all the vegetables

step 2

  • STEP 2.Boil water in a pan and boil every vegetables for 2min 1 by 1

step 3

  • STEP 3.Heat a kadhai with mustard oil

step 4

  • STEP 4.Fry brinjal and unripe banana

step 5

  • STEP 5.Set aside

step 6

  • STEP 6.Add dried red chilies

step 7

  • STEP 7.Add bay leaves and panch phoran

step 8

  • STEP 8.Add the ginger garlic paste

step 9

  • STEP 9.Add the vegetables one by one

step 10

  • STEP 10.Fry for 15mins , cover and cook

  • STEP 11.Add grated coconut

step 12

  • STEP 12.Add turmeric powder

step 13

  • STEP 13.Add salt and sugar

step 14

  • STEP 14.Add green chilies

step 15

  • STEP 15.Add atta 8g and mix well

step 16

  • STEP 16.Add ghee and bhaja masala , mix well

step 17

  • STEP 17.Serve as side dish
