  • 1/2 cup Sprouted Mung Beans
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard Seeds
  • as per your need A Few Curry Leaves
  • 1/2 Onion, Finely Chopped
  • 1/2 teaspoon Ginger Garlic Paste
  • 1 Green Chilies, Slit
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • 1/2 teaspoon Coriander Powder
  • 1/2 cup Coconut Milk
  • 1/2 cup Water
  • As required Salt To Taste
  • as required Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Sprout the mung beans by soaking them overnight and draining the water.
  • STEP 2.In a pan, heat oil and add mustard seeds, curry leaves, and onions. Cook until onions are golden brown.
  • STEP 3.Add ginger-garlic paste, green chilies, and spices. Cook until the raw smell disappears.
  • STEP 4.Add the sprouted mung beans and mix well.
  • STEP 5.Add coconut milk and water. Cover and simmer until the mung beans are cooked and the curry thickens.
  • STEP 6.Garnish with coriander leaves and serve hot with rice or roti.

Cooking Tips

  • You can add vegetables like carrots, potatoes, or spinach to enhance the flavor and nutritional value.
  • For a spicier curry, add more green chilies or red chili powder.
  • Serve with a side of coconut sambal for a traditional Sri Lankan meal.
