Ingredients for Kundapura Chicken Recipe

  • As Required Base masala
  • 2 Tbsp coconut oil
  • 1 Tsp cardamom
  • Tbsp coriander seeds
  • As Required cinnamon sticks one piece
  • As Required dry red chilies two no
  • 1 Tbsp fennel seeds
  • 1 Tbsp mustard seeds
  • 1 Tbsp poppy seeds
  • 1 Tbsp cumin seeds
  • 1 Tbsp pepper seeds
  • As Required green chilies two No
  • As Required garlic whole cloves two no
  • 1 Tbsp carom seeds
  • 1 Tbsp vinegar
  • As Required onion whole one no
  • 2 Pieces cloves
  • 1 Cup soak tamarind
  • 1 Tbsp fenugreek seeds
  • As Required ingredients for chicken
  • 400 g Chicken
  • 1 Pieces Tomato
  • 1 Pieces onion
  • 1 Cup coconut milk
  • As Required Masala
  • A Few Bay leaves
  • As Required Salt

Directions: Kundapura Chicken Recipe

  • STEP 1.1. Take all the masala and grind it well. Blend and check for consistency. Keep the paste aside.
  • STEP 2.2. Take a saucepan and add coconut oil and bay leaves, fry bay leaf just enough with the oil and remove. Add onions and tomatoes and fry until the vegetables soften.
  • STEP 3.3. Add chicken, base masala and a gravy made by tempering the base masala with turmeric, onions and curry leaves. Add coconut milk, salt and a cup of water.
  • STEP 4.4. Stir the ingredients one last time before covering the saucepan.
  • STEP 5.5. Let the gravy develop over low heat flame before turning off.
  • STEP 6.6. Serve with hot rice.
