A popular bengali recipe of pumpkin and potatoes with spices The Kumror Chokka Recipe is a classic Bengali dish which is packed with flavours from panch phoran masala and spices and cooked in mustard oil. Kumror means pumpkin in bengali and is a very commonly used vegetable in the Bengali Cuisine. Pumpkin is a very nutritious vegetable, that is low in calories, rich in Vitamin A, potassium, manganese and lots of other essential minerals.

Ingredients for Kumro'R Chokka Recipe

  • 600 gram Ripe pumpkin
  • 300 gram Potatoes
  • 20 gram Soaked bengal gram
  • 20 gram Grated coconut
  • 12 gram Ginger paste
  • 6 gram Cumin powder
  • 1/2 teaspoon Turmeric powder
  • 1/4 teaspoon Red chili powder
  • 1 pinch Asafoetida
  • 50 gram Mustard oil
  • 2 piece Dried red chilies
  • 2 piece Bay leaves
  • 1/2 teaspoon Panch phoron
  • As required Salt
  • 2 Green chilies
  • 1/2 teaspoon Bhaja masala
  • 1 teaspoon Ghee

Directions: Kumro'r Chokka Recipe

step 1

  • STEP 1.Peel and cut the pumpkin in cubes

step 2

  • STEP 2.Cut the potatoes in cubes

step 3

  • STEP 3.Make a paste of ginger paste 12g,cumin powder 6g ,turmeric powder ½ tsp ,red chili powder ¼ tsp ,asafoetida 1 pinch

  • STEP 4.Heat the pan and add mustard oil

step 5

  • STEP 5.Fry the pumpkins and set aside

step 6

  • STEP 6.Add dried red chilies, bay leaves, panch phoron

step 7

  • STEP 7.Add cubed potatoes and add salt

step 8

  • STEP 8.Fry until golden

step 9

  • STEP 9.Add soaked bengal gram and 2 mins

step 10

  • STEP 10.Add grated coconuts

step 11

  • STEP 11.Add the paste prepared and cook 5mins

step 12

  • STEP 12.Add hot water and cover to make the potatoes soft

step 13

  • STEP 13.Add the fried pumpkins

step 14

  • STEP 14.Add green chilies and sugar

step 15

  • STEP 15.Add salt to taste

step 16

  • STEP 16.Add bhaja masala and ghee

step 17

  • STEP 17.Serve with luchi
