Quick recipe with ash gourd. another quick recipe of thoran made with kumbalanga or ash gourd. It is also called as white gourd or petha or winter melon. Ash gourd is easily available in south India and maharashtra. Its a lovely veggie and quite different from the other gourds. Adding ash gourd to sambar with other veggies and also making ash gourd thoran and ash gourd upkari.

Ingredients for Kumbalanga Thoran Recipe

  • 1/2 No.s Ash gourd
  • 3 No.s Shallots
  • 2 Garlic pods
  • 1 sprig Curry leaves
  • As required Salt
  • 1/2 teaspoon Turmeric powder
  • 1/2 teaspoon Cumin seeds
  • 1/4 cup Grated coconut
  • 1 teaspoon Mustard seeds
  • 2 No.s Dry red chilli sliced

Directions: Kumbalanga Thoran Recipe

step 1

  • STEP 1.Peel off the skin and finely chop the ash gourd.

step 2

  • STEP 1.Grind 3 shallots, 2 garlic pods, ¼ cup of grated coconut, ½ tsp turmeric powder, a pinch of salt and ½ tsp cumin seeds.

  • STEP 1.Mix the ingredients together with chopped ash gourd in a bowl.

step 4

  • STEP 1.Set a cooking pan on the stove with 2 tbsp of oil. Add 1 tsp of mustard seed to oil and let it to splutter.

step 5

  • STEP 1.Add sliced dry red chilli and a few curry leaves. Saute well.

step 6

  • STEP 1.Now transfer the main ingredients from bowl to the pan. Mix all ingredients together.

step 7

  • STEP 1.7 cook on a medium flame for 15 minutes with a lid.

step 8

  • STEP 1.Turn off the flame and mix well to serve the dish.
