Ingredients for Kukul Mas Curry Recipe

  • 1/4 tablespoon coriander seeds
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon fennel seeds
  • 1/4 inch Cinnamon
  • 1/4 teaspoon black peppercorns
  • 1/2-3/4 No.s Cardamom Pods
  • 1/2-3/4 No.s red chillies
  • 1/4 teaspoon Oil
  • 1/4 inch chopped ginger
  • 1 cloves chopped garlic
  • 3/4 No.s dried chillies
  • 2-2.50 No.s curry leaves
  • 1/2 No.s sliced onions
  • 75 g gram chicken
  • As required Salt

Cooking Directions

  • STEP 1.To make the Sri Lankan curry powder, on a hot pan add 1 tsp coriander seeds, 1 tsp cumin seeds, 1 tsp fennel seeds, 1 tsp black peppercorns, 1 inch cinnamon stick, 3 cardamom, 2 to 3 dry red chillies. Roast for 3 to 4 minutes till the aroma of the spices comes through. Turn off the what.
  • STEP 2.Transfer roasted whole spices to the small jar to the mixer grinder and grind to a smooth powder.
  • STEP 3.In a pressure cooker add 1 tsp oil, 4 cloves chopped garlic, 1 inch chopped ginger, 8 to 10 curry leaves, 2 to 3 dry red chillies, 2 onions thinly sliced. Saute until onions caramelise.
  • STEP 4.Then add 300 gms chicken curry cut pieces, Sri Lankan masala powder, ¼ tsp turmeric, salt to taste. Mix to combine the chicken well with the masala.
  • STEP 5.Add 1 cup of water and pressure cook for 3 to4 whistles. Allow the pressure to release naturally.
  • STEP 6.Open the cooker and add 200 ml coconut milk. Brisk boil for 5 minutes. Turn off the heat.
  • STEP 7.Serve hot with rice.
