A very easy instant cookies made from tapioca flour, coconut cream.It is mostly prepared during festive seasons. Kuih Bangkit is a traditional Chinese New Year cookies and it is made mainly from tapioca flour, eggs and coconut milk. It is a cookie that is hard on the outside but melts in your mouth. This is one cookie that has quite a long shelf life compared to other cookies like Pineapple Tarts.

Ingredients for Kuih Bangkit Recipe

  • 300 gram tapioca flour
  • 100 gram Sugar
  • 1 Nos egg
  • 1/2 teaspoon baking powder
  • 1 Nos egg yolk
  • 3 Nos pandan leaves
  • 130 milliliter coconut cream

Directions: Kuih Bangkit Recipe

step 1

  • STEP 1.Mix tapioca flour with pandan leaves and bake it at 150 degrees celsius for 1 ½ hours.

step 2

  • STEP 1.Now remove the pandan leaves and let it cool down.

step 3

  • STEP 1.Separately in a bowl add fine sugar, eggs and mix until it turns light yellow in colour.

step 4

  • STEP 1.Now add the baked flour into the egg mixture followed by coconut milk.

step 5

  • STEP 1.Bake the kuih bangits at 150 degrees celsius for 15 mins.

step 6

  • STEP 1.Keep it aside and let it cool then store it in an airtight container.
