A very easy instant cookies made from tapioca flour, coconut cream.It is mostly prepared during festive seasons. Kuih Bangkit is a traditional Chinese New Year cookies and it is made mainly from tapioca flour, eggs and coconut milk. It is a cookie that is hard on the outside but melts in your mouth. This is one cookie that has quite a long shelf life compared to other cookies like Pineapple Tarts.

- 300 gram tapioca flour
- 100 gram Sugar
- 1 Nos egg
- 1/2 teaspoon baking powder
- 1 Nos egg yolk
- 3 Nos pandan leaves
- 130 milliliter coconut cream

How to Make Kuih Bangkit Recipe

STEP 01
Mix tapioca flour with pandan leaves and bake it at 150 degrees celsius for 1 ½ hours.

Now remove the pandan leaves and let it cool down.

Separately in a bowl add fine sugar, eggs and mix until it turns light yellow in colour.

Now add the baked flour into the egg mixture followed by coconut milk.

STEP 01
Bake the kuih bangits at 150 degrees celsius for 15 mins.

Keep it aside and let it cool then store it in an airtight container.
