  • 1/2 cup Rice
  • 1/2 cup Ivy Gourd, Chopped
  • 1 tablespoon Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Cumin Seeds
  • as needed A Few Curry Leaves
  • 1/4 teaspoon Turmeric Powder
  • 1/2 teaspoon Red Chili Powder
  • As required Salt To Taste
  • 1 cup Water

Directions: Kovakai/tindora/ivy Gourd Rice-opos Recipe

Cooking Directions

  • STEP 1.Wash and soak the rice for 30 minutes.
  • STEP 2.In a pressure cooker, add oil, mustard seeds, cumin seeds, and curry leaves.
  • STEP 3.Add chopped ivy gourd, turmeric powder, red chili powder, and salt. Saute for a few minutes.
  • STEP 4.Add the soaked rice and water. Pressure cook for 3 whistles.
  • STEP 5.Let the pressure release naturally. Fluff the rice with a fork and serve hot.

  • You can add roasted peanuts or cashews for extra crunch.
  • Serve the rice with raita or pickle for a complete meal.
