  • 1/2 cups fresh coriander leaves
  • As required finely chopped
  • 1/4 gram flour (besan)
  • As required ½ cup water
  • As required Or
  • 1/2 tbsp Rice Flour
  • 1/4 tsp Ginger-green chilli paste
  • As required ½ tsp turmeric powder
  • 1/4 tsp red chilli powder
  • 1/4 tsp coriander powder
  • As required ½ tsp cumin powder
  • As required ½ tsp sesame seeds
  • As required ½ tsp cumin seeds
  • 1/4 nos Pinch asafoetida
  • As required ½ tsp Sugar
  • As required Salt
  • As required to taste
  • 1/4 tsp Lemon juice
  • 1/4 tbsp Oil
  • 1/4 tbsp Oil
  • As required ½ tsp mustard seeds
  • As required ½ tsp sesame seeds
  • 1/4 nos Pinch asafoetida
  • 0-1/4 nos green chillies
  • As required slit
  • 1/2 tbsp fresh coriander
  • As required For Garnish

Directions: Kothimbir Vadi: The Maharashtrian Tea-time Snack Made With Fresh Coriander Recipe

  • STEP 1.In a bowl, add the chopped coriander, besan, rice flour, ginger-green chilli paste, turmeric, chilli powder, coriander powder, cumin powder, sesame seeds, cumin seeds, asafoetida, and sugar.
  • STEP 2.Add lemon juice and water slowly to make a thick, smooth batter out of it. It should be firm enough to hold its shape and not too runny.
  • STEP 3.Take a steaming tray or steel thali, grease it with oil and then spread the batter evenly on it. Steam for 15-20 minutes until firm and perfectly cooked through.
  • STEP 4.Let the steamed mixture cool down thoroughly before cutting it into squares. Cooling helps the vadi hold its shape while frying them.
  • STEP 5.In a pan, heat oil in a pan and shallow-fry the pieces over medium flame, turning them gently until both sides get crisp and golden.
  • STEP 6.For the tempering, heat oil in a small pan and then add mustard seeds, sesame seeds, asafoetida and slit green chillies. Let everything splutter, then pour the tempering over the fried vadis.
  • STEP 7.Garnish with fresh coriander and serve kothimbir vadi warm with green chutney, sweet tamarind chutney or a cup of tea.
