About Kothimbir Vadi Recipe:
Traditional kothimbir vadi is deep fried. But to make it a little healthy, I have shallow fried them. Kothimbir vadi is a delicious savory crisp snack from the Maharashtrian cuisine made with gram flour (besan), coriander leaves, peanut, sesame seeds and spices. These savory, herby and flavorful bites can be pan-fried or deep-fried. They are a popular tea-time fritter snack loaded with coriander leaves (cilantro)

Ingredients for Kothimbir Vadi Recipe
- 2 cup fresh coriander leaves finely chopped
- 1 cup basin
- tablespoon chopped ginger half
- tablespoon chopped garlic half
- gram reen chilli chopped one
- 1 tablespoon sesame seeds
- 2 tablespoon roasted peanuts powder
- tablespoon red chilli powder Half
- 1 tablespoon cumin coriander powder
- 14 tablespoon turmeric powder
- 18 tablespoon baking soda
- As required Salt
- 1/4 cup Water
- As required Oil

How to Make Kothimbir Vadi Recipe
STEP 01
In a large mixing bowl take 2 cups of chopped coriander leaves.
STEP 02
Also add 1 cup of besan.
STEP 03
Additionally add 1 tsp ginger-garlic paste, 1 green chilli, ½ tsp red chilli powder, ½ tsp turmeric, ½ tsp coriander powder, ½ tsp cumin powder, ¼ tsp garam masala powder, 1 tsp sesame seeds, salt and 1 tsp lemon juice.
STEP 04
Combine well making sure all the spices are mixed well.
STEP 05
Also squeeze and mix making sure the coriander leaves are squeezed well.
STEP 06
Further add water as required and begin to knead.
STEP 07
Knead to soft dough.
STEP 08
Shape the dough to a cylindrical shape greasing hands with oil.
STEP 09
Steam the dough for 15-20 minutes.
STEP 10
Cool the dough completely and cut them into thick slices.
STEP 11
Further, deep fry or shallow fry in hot oil.
STEP 12
Stir occasionally till the wadi turns crisp and golden brown.
STEP 13
Finally, serve kothimbir vadi garnished with coriander leaves along with cutting chai.
