A homemade version of the famous Kolkata egg roll filled with fresh vegetables and flavoured with sauces.The egg roll is certainly Calcutta’s most recognizable and popular street food. But what makes a good roll? It should be served hot. So the assembly process, once the paratha has been fried, needs to be quick and efficient. The outer shell, the paratha itself, must be flaky yet soft. It should not be too chewy, that is to say, you should not have to tug at it with your teeth. Most importantly, the parathashould be fully cooked and crisp. The filling should be evenly distributed so you get a little of everything with each bite.

Directions: Kolkata Style Egg Roll Recipe

step 1

  • STEP 1.-1)in a mixing bowl crack 3 eggs, add 2 chopped green chillies, coriander leaves chopped, 1 onion finely chopped, salt to taste. Whisk the eggs and chopped vegetables together.

step 2

  • STEP 2.-2)in a large mixing bowl add 1 cup whole wheat flour and salt to taste. Add water and knead to make a smooth soft dough. Drizzle a little oil on the dough and continue to knead for a few seconds .

  • STEP 3.-3)portion the dough into large lemon sized balls and on a flat surface dusted with flour, roll out the dough to a large thin chapati.

step 4

  • STEP 4.-4)drizzle a little oil on a preheated tawa and fry the chapati on medium heat. Flip the chapati over to ensure that both sides cook through. Small brown spots will appear. Once the chapati is cooked remove it from the tawa.

step 5

  • STEP 5.-5)on the same tawa, ladle some of the beaten egg and place a cooked chapati over the egg.

step 6

  • STEP 6.-6)drizzle a little oil over the chapati and spread it. Allow the egg to fry for 1 to 2 minutes. Egg cooks very fast.

step 7

  • STEP 7.-7)then flip the egg chapati over and let it fry for a few seconds. Remove and place on a plate.

step 8

  • STEP 8.-8)along the diameter of the egg side of the chapati, arrange strips of chopped capsicum, strips of carrot and onions cut lengthwise.
