Cooking Directions

  • STEP 1.Soak the kokum in warm water for 15-20 minutes until it softens.
  • STEP 2.In a blender, grind coconut, ginger, garlic, and spices to make a smooth paste.
  • STEP 3.Heat oil in a pan and sauté onions until golden brown.
  • STEP 4.Add the coconut paste to the pan and cook until the oil separates.
  • STEP 5.Add water, soaked kokum, and salt to the pan and bring it to a boil.
  • STEP 6.Simmer the curry for 10-15 minutes until the flavors are well blended.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice.

  • You can adjust the amount of kokum according to your taste preference.
  • If you don't have fresh coconut, you can use desiccated coconut soaked in warm water.
  • For a spicier curry, you can add green chilies or red chili powder.
