Ingredients for Koki Beans Recipe

  • 8 cup black eyed peas peeled, soaked and rinsed
  • 1.50 cup palm oil
  • 1 bag spinach
  • 1.50 tablespoon 2 salt
  • 6 cup Water
  • 5 Nos Chili peppers
  • As required Ingredients For wrapping
  • 1 bag frozen banana leaves and/ or 1 roll aluminium foil foil

How to Make Koki Beans Recipe

step 1

STEP 01

Chop spinach and blend soaked beans coarsely along with peppers and 4 cups of water and wash the banana leaves and cut them into rectangles

STEP 01

Lightly heat the palm oil and keep it aside

STEP 01

Add salt and whisk in eggs into the ground beans, Now add the palm oil to the bean paste along with spinach and mix it well

STEP 01

Warm the banana leaves and now pour in the koki mixture into a banana leaf and wrap it.

STEP 01

Line the cooking pot with banana leaf/aluminium foil and place the wraps into the pot add in water and cover it with foil or banana leaves

STEP 01

Cook it for about 2 hours meanwhile checking it occassionally to avoid burning

STEP 01

Once cooked unwrap it and serve.
