  • 0.13 cup Sugar
  • 1 teaspoon Gelatin

  • 1.50 Egg Yolks
  • 1 tablespoon Sugar

Cooking Directions

  • STEP 1.In a blender, puree the kiwi until smooth.
  • STEP 2.In a saucepan, heat the cream and sugar until the sugar has dissolved.
  • STEP 3.Remove the saucepan from the heat and stir in the kiwi puree.
  • STEP 4.Sprinkle the gelatin over the mixture and let it sit for 5 minutes to bloom.
  • STEP 5.Place the saucepan back on low heat and stir until the gelatin has completely dissolved.
  • STEP 6.Pour the mixture into individual molds and refrigerate for at least 4 hours or until set.
  • STEP 7.In a separate saucepan, heat the milk and vanilla extract until it starts to steam.
  • STEP 8.In a bowl, whisk together the egg yolks and sugar until pale and creamy.
