The most famous vegetarian dish in Paraguay is undoubtedly kivev. This traditional dish is made with the most popular ingredients in Paraguay: pumpkin, cornmeal, and fresh cheese. It has an unusual light red color and a creamy texture, similar to polenta.

- 1 kilogram Pumpkin
- 3 cup Water
- 2 tablespoon Oil
- 150 gram fresh white cheese
- 2 cup cornmeal
- 1 No.s onion, chopped finely
- 1 teaspoon Sugar
- 1 cup Milk
- 1 teaspoon coarse salt

How to Make Kivevé Recipe
step 1
STEP 01
peel and chop the pumpkin and cook it in 3 cups of water until it becomes soft.
step 2
STEP 01
heat oil in a pan and saute onions in it until they turn golden brown.
step 3
STEP 01
add the cooked pumkin in the food processor in order to make a puree.
step 4
STEP 01
add the pumpkin puree to the pan and gradually add milk to it along with some cornmeal, sugar and salt.
step 5
STEP 01
cook this at low flame for around 10 minutes and top it with grated cheese.
