A japanese recipe of hot Dashi soup topped with Aburaage that has been cooked in a sweet and salty sauce. With its juicy and plump sweet soy sauce flavored deep-fried tofu, Chewy Udon noodles and the simple but sophisticated broth, it is a must-try Japanese noodle soup. Kitsune udon is a delicious dish made with thick udon noodles served in a dashi based soup stock with a large piece of fried tofu (thought to be the fox's favourite food). This dish is easy to make and sure to be a household favourite before too long.

Ingredients for Kitsune Udon Recipe

  • As required Kitsune
  • 2 Aburaage, rectangles cut into 2 squares
  • 1 tablespoon Soy sauce
  • 3 tablespoon Sake
  • 4 tablespoon Mirin
  • 1 tablespoon Sugar
  • 1/2 cup Water
  • As required Udon and soup
  • 4 cup Dashi
  • 1/4 teaspoon 1/2 salt
  • 2 tablespoon Soy sauce
  • 2 packages of frozen Udon, thawed
  • 4 green onions, thinly cut
  • As required Shichimi Togarashi

Directions: Kitsune Udon Recipe

  • STEP 1.Boil the aburage and drain the water.
  • STEP 2.In a pot add rest of the ingredients of kitsune and add the aburaag cook until its dry.
  • STEP 3.Boil the dashi and add soy sauce, sake, mirinand sugar.
  • STEP 4.Add udon and simmer it for 2 mins.
  • STEP 5.Serve the noodles in bowls and top with prepared aburaage , garnish with green onions and shichimi.
