A japanese recipe of braised burdock root and carrot in a sweet and salty sauce. The flavor of burdock root is earthy and, well, rooty, but with an intriguing blend of sweetness and bitterness that is similar to an artichoke, to which it is related. Its texture is both meaty and slightly crunchy with a pleasant chew. Kinpira is a Japanese cooking style that can be summarized as a technique of "sauté and simmer". It is commonly used to cook root vegetables such as carrot, burdock and lotus root, seaweeds such as arame and hijiki and other foods including tofu and wheat gluten, and even meat.

Ingredients for Kinpira Recipe

  • 1 Gobo , Sasagaki cut
  • 1 carrot, thinly cut
  • 1 tablespoon Oil
  • 1/4 C Dashi
  • 2.50 tablespoon Soy sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Sake
  • 1 tablespoon Mirin
  • 1 tablespoon sesame seeds
  • As required Shichimi Togarashi

Directions: Kinpira Recipe

step 1

  • STEP 1.Cut all the vegetables thinly. Soak the godo pieces in water to remove the harshness. Strain the water. Heat oil in afrying pan. Add gobo and cook for 2 minutes. Add the carrots and cook.

step 2

  • STEP 1.Add dashi, soy sauce, sugar, sake and mirin, cook until its dry. Add the sesame seeds and mix well. Serve with shichimi togarashi.
