Khua Kling is an extremely common southern Thai dish. The strong spices and the flavorsome curries are what I love most about southern Thai cuisine. This curry can be easily made with just a few ingredients like pork, curry paste and lemon grass, flavoured with some spices nd suces like spur chillies, thai bird chillies, salt and is cooked in vegetable oil.

Ingredients for Khua Kling Recipe

  • 500 gram minced pork/beef
  • 3 tablespoon southern Thai curry paste
  • 50 gram Lemongrass
  • 1 spur chili
  • As required Palm sugar
  • As required Thai bird chilies
  • As required Salt
  • As required Cooking Oil

Directions: Khua Kling Recipe

step 1

  • STEP 1.Bruise the lemongrass, just cut the end off(as it is very hard), peel off the outer layer and now finely slice them.

step 2

  • STEP 2.With the kaffir leaves, take off the stem and then pull the stem out of the leaf as well. roll those up and then finely slice them.

step 3

  • STEP 3.Split the red chilies from the middle and start chopping them

step 4

  • STEP 4.Take a saucepan to add 1tsp oil and then add 3tbsp southern thai paste and keep stirring and mixing it well with the oil to get the grassy flavor out. Turn the flame down to medium and keep stirring them.

step 5

  • STEP 5.Add the minced meat and keep scooping and mixing it. Keep frying the meat until it is broken into small pieces

step 6

  • STEP 6.Add 1tsp salt and mix it well, then go in with the sliced lemongrass mix that is followed by the sliced kaffir leaves, fry them for a minute or so.

step 7

  • STEP 7.And then add the red chilies and keep frying for another 1 min. Turn off the flame and keep stirring.
