STEP 1.Slit the brinjals leaving the stem on and boil in water for 20 minutes. Strain and let them cool.

STEP 1.Cut the brinjals in halves with the stem. Scoop out the centre pulp of the brinjal and keep the skin cups aside.

STEP 1.In a small mixing bowl, add the 250 gms chicken or mutton keema, break 1 egg, add the brinjal pulp. Mix well.

STEP 1.Preheat a pan and add 2 tbsp oil, when oil is hot add 1 small onion chopped and saute till translucent.

STEP 1.Add 2 inches ginger chopped, 3 green chillies chopped and a small bowl of chopped pudina leaves. Stir.

STEP 1.Next add the filling mixture of mince, egg and brinjal pulp add salt and mix together well.fry on medium heat for 10 minutes. Turn off the what. Let it cool.

STEP 1.Fill this mixture into the brinjal skin cups.

STEP 1.Sprinkle maida over the top of the filling.

STEP 1.Heat oil in a pan. Shallow fry the brinjal cups till browned on both sides. Be gentle when turning/ flipping the brinjal over.
