Khasta gaja is a traditional sweet from Odisha, known for its crispy-on-the-outside and soft-on-the-inside texture. This deep-fried delicacy is often made during festivals, weddings, and celebrations and is also part of the "Chappan Bhoga" offered to Lord Jagannath. It's uniqueness lies in the flakiness of the sweets ."Khasta" refers to the flakiness of the sweet. The dough is folded multiple times during preparation to create multiple layers that become crispy when fried. Cardamom, fennel, and saffron are used to flavor the sweet, giving it a distinctive aroma. The fried delicacy is soaked in a sugar syrup that makes the inside soft and juicy while the outside remains crispy. Though sweet in taste it is often prepared during festivals and often consumed as a snack in Odia households . -

Ingredients for Khasta Gaja Recipe

  • 126 grams or of refined flour .
  • As required Half a teaspoon of salt .
  • As required One teaspoon of fennel seeds .(crushed).
  • As required One and a half tablespoon of ghee .
  • 100.50 grams or of sugar .
  • 62.50 cup Oneor milliliters of water .
  • 1/2 nos pinch of saffron .(optional).
  • As required One tablespoon of lemon juice .

Directions: Khasta Gaja Recipe

  • STEP 1.1.First of all, take refined flour, salt , fennel seed in a parat . mix all the dry ingredients well with your hands .
  • STEP 2.2. In order to make the khasta , take the same measuring cup in which you have measured refined flour ,in it take ½ cup or 125 millliliters of melted ghee and add it to the refined flour mixture and mix it. Mix well until the mixture resembles breadcrumbs. Gradually add water and knead into a semi-firm dough. Cover and let it rest for 10 minutes.
  • STEP 3.3 . .In the meantime , we will proceed to prepare the sugar syrup . For it , Switch on the flame and heat a kadai, Add 2 cups or 400 grams of sugar . Add 1 cup or 250 milliliters of water to it . Add saffron strands to it if you desire or you can skip it .Cook it on medium high flame till the syrup reaches a sticky texture .Switch off the flame and add one tablespoon of lemon juice to it to prevent crystallization .keep it aside .
  • STEP 4.4. .Meanwhile , after 10 minutes, The dough is already set .Do not knead the dough . just make it smooth and Spread it a little and give it a round shape with your hands or roll it gently with a rolling pin just like a roti . Keep half Inch thickness while rolling it .
  • STEP 5.5. Cut the roti into 4 pieces just like a plus sign . overlap the 4 pieces over each other . press it, flatten it , and roll it again . repeat this process 2 -3 times .Roll it gently into a square shape . trim the uneven edges . Cut it lengthwise and then cut into square shape .Roll the uneven edges again and cut into square shape . the gaja is ready for frying .
  • STEP 6.6. Heat any neutral flavored oil or ghee . Put the gaja in Slightly hot oil . Ensure that the gajas are properly dipped in oil and are deep - fried ..Fry the gajas in batches do not overlap them .Leave them undisturbed in oil for a while till the time they puff up and float on the surface . Fry it on low flame till golden and crispy .Flip the sides of the gaja for uniform frying. When fried well take it out and immediately transfer them to the sugar syrup .
  • STEP 7.7. Reheat the sugar syrup and add one teaspoon of green cardamom powder . mix well. Turn off the flame when the sugar syrup is hot , add the fried gaja to the sugar syrup , mix gently, if the fried gaja is hot and the sugar syrup is hot , then only the gaja will absorb the sugar syrup. Leave the gaja in the sugar syrup for 8-10 minutes . In the meantime, fry the remaining gaja . After 10 minutes , take them out from the sugar syrup and place it on a plate . Khasta gajas are ready to be served.
