Khajoor dry fruits roll is a sweet dish that is relished by all age groups. Loaded with dry fruits like cashew nuts, almonds, khus khus, pistachios, one can just bite into them anytime and still not complain of the calorie intake.
STEP 1.1. Put the seedless khajoor in mixer grinder and grind it coarsely.
STEP 2.2. Take a non stick pan and add 2 tbsp desi ghee. Let it heat a lil.
STEP 3.3. Add the coarsely grounded khajoor and mix it well so it warms up evenly.
STEP 4.4. Now add all the roasted nuts - almonds, cashews, pistachios, khus khus and elaichi powder . Mix it well for another 2 to 3 mins.
STEP 5.5. Turn off the flame. Bring the mixture together into a cylindrical roll shaped log form.
STEP 6.6. Crush the pistachios coarsely and spread them on a plate or tray. Add khus khush to it.. n mix again.
STEP 7.7. Take the cylindrical log and roll them over on the pistachios-khus khus mixture. Make sure your cylindrical log is evenly coated with this mixture.
STEP 8.8. Wrap this log with butter paper/foil paper and refrigerate.
STEP 9.9. Once cool, cut the log into even sized cylindrical pieces. SERVE TO YOUR LOVED ONES WITH A "MITHAAS WAALI "SMILE .
