It is one of the bhoga ( prasad ) from Chhapana Bhoga ( 56 Prasad ) and offered to Lord Jagannath as a prasad at Puri Temple, Odisha.Kaja is so much similar to chiroti or peni in preparation but looks different. It’s taste is almost close to Badusha but the look and texture is so different. The two well-known types of Kajas are Madatha Kaja and Gottam Kaja. Madatha Kajas are made of rolled-up ribbons of pastry, whereas Gottam Kajas are made of cylinders of pastry. Gottam Kajas are juicy from inside and dry on the outside. They melt as soon as they are put in the mouth.

Ingredients for Khaja Recipe

  • 2 cup All purpose flour
  • 7 tablespoon Melted desi ghee
  • 3 cup Sugar
  • 2.50 cup Water
  • As required Green cardamom
  • 1.50 teaspoon Rice flour
  • As required Cooking oil to fry khaja

Directions: Khaja Recipe

step 1

  • STEP 1.Knead the dough with all purpose flours and 4tbsp of ghee, add water if needed

step 2

  • STEP 2.Rest it for 20mins

step 3

  • STEP 3.Take 1 ½ tsp of rice flour and mix with ghee

step 4

  • STEP 4.Start rolling the dough , make chapati, brush the rice flour mix in between and keep one over one

step 5

  • STEP 5.Roll together and cut into small pieces and roll it into flat again

step 6

  • STEP 6.Heat the oil in a pan

step 7

  • STEP 7.Start frying one by one

step 8

  • STEP 8.Until they turn brown

step 9

  • STEP 9.Take out from the oil

step 10

  • STEP 10.Make sugar syrup with cardamom and lemon in it

step 11

  • STEP 11.Dip the khaja in the syrup

step 12

  • STEP 12.Serve as sweets
