  • 1/2 teaspoon Fennel Seed
  • 1/2 inch Cinnamon bark also known as cassia
  • 1/2 Star anise
  • 4 Cloves
  • 4 Green cardamom pods
  • 1.25 teaspoon Kerala masala the ground spice. see above
  • 3/4 teaspoon Kashmiri chili powder
  • 1/4 teaspoon Kasoor methi dried fenugreek leaves
  • 0.13 teaspoon Turmeric
  • 1/4 teaspoon Kosher salt
  • 1.50 tablespoon Coconut oil any neutral oil will also work or even 1/2 and 1/2 coconut and neutral oil

  • 1/2 inch 2-3 finger hot green chilies cut into s
  • 2.50 Fresh curry leaves
  • 1/2 cup Indian hotel curry gravy don't worry if it seems too thick. the juices from the chicken will thin it out
  • 1/4 teaspoon Tamarind paste or tamarind pulp if you make it yourself. tamarind concentrate is not the same thing as tamarind paste. watch out
  • 2 piece 3 boneless, skinless chicken thighs cut into each
  • 1.50 tablespoon Coconut milk
  • 1/2 tablespoon Coconut oil
  • 1/4 teaspoon Mustard seeds
  • 5 Fresh curry leaves
