Ingredients for Keftethes Recipe

  • 1.50 pound Tomatoes, diced
  • 1 small onion, finely chopped
  • 3-5 scallions , finely sliced
  • 1/2 cup finely chopped fresh herbs
  • 1/4 cup Parsley
  • 1/4 cup basil or dill
  • 2 tablespoon finely chopped fresh mint
  • 2 teaspoon dried crushed oregano
  • As required Salt and freshly ground pepper
  • 1.50 cup Maida/All Purpose Flour
  • 1 teaspoon baking powder
  • 1/2 pound Optional: feta cheese, crumbled
  • As required Vegetable oil, for frying
  • As required tzatziki sauce for dipping

Directions: Keftethes Recipe

  • STEP 1.In a massive bowl, mix the diced tomatoes, onions, scallions, and herbs.
  • STEP 2.Season gently with salt and pepper.
  • STEP 3.In a tiny bowl, mix the flour, leavening, salt, and pepper and whisk to mix.
  • STEP 4.Add the flour to the tomato mixture and blend well with a spatula till everything is combined.
  • STEP 5.Mix within the broken feta is mistreatment.
  • STEP 6.Taste and add a lot of salt and pepper if desired.
  • STEP 7.This mixture will sit within the white goods for some hours in order that all of the flavors marry.
  • STEP 8.It may also be created directly.
  • STEP 9.I value it more highly to permit it to sit down a minimum of one hour for best flavor.
  • STEP 10.Heat the oil during a cooking pan over medium high heat.
  • STEP 11.Carefully drop one tablespoon of batter at a time within the oil and fry a minimum of three minutes before flipping to stop the fritter from falling apart.
  • STEP 12.Cook till golden brown all around. 6-7 minutes.
  • STEP 13.Set the fritters on a plate lined with paper towels to soak up the surplus oil.
  • STEP 14.Serve directly with tzatziki sauce for dipping.
