Directions: Kebab Karaz Recipe

Cooking Directions

  • STEP 1.In a bowl, mix together the yogurt, lemon juice, garlic, and spices to make the marinade.
  • STEP 2.Add the meat to the marinade and let it marinate for at least 2 hours, or overnight for best results.
  • STEP 3.Preheat the grill to medium-high heat. Thread the marinated meat onto skewers and grill for about 10-12 minutes, turning occasionally, until cooked to your desired doneness.
  • STEP 4.While the meat is grilling, prepare the cherry sauce. In a saucepan, combine the cherries, sugar, lemon juice, and water. Bring to a boil, then reduce heat and simmer for about 10 minutes until the cherries are soft and the sauce has thickened.
  • STEP 5.Serve the grilled kebabs with the cherry sauce on the side. Enjoy with rice or flatbread.

Cooking Tips

  • For extra flavor, you can add some chopped fresh herbs like parsley or mint to the marinade.
  • If using wooden skewers, soak them in water for about 30 minutes before threading the meat to prevent them from burning on the grill.
  • You can also use chicken or vegetables instead of lamb or beef for a different variation of this dish.

Storage and Serving

  • Leftover kebab karaz can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat the kebabs in the oven or microwave until heated through before serving.
  • Serve the kebabs with fresh salad, yogurt sauce, and warm flatbread for a complete meal.
