This recipe originates from the southern state of Karnataka in the Indian sub continent and is prepared on some special occasions. This this recipe on your own to give yourself a little sweet treat.

Ingredients for Karnataka Style Kashi Halwa Recipe

  • 1 tablespoon Ghee for roasting cashew nuts
  • 10 Cashew nuts halved or broken Nos
  • 3 cup Ash gourd grated
  • 1 cup Sugar
  • 1/2 teaspoon Cardamom powder
  • As required Few strands saffron
  • 2 tablespoon Ghee
  • As required For garnish few roasted cashew nuts and strands of saffron

Directions: Karnataka Style Kashi Halwa Recipe

  • STEP 1.In a preheated pan add 1 tbsp ghee, 10 halved or broken cashew nuts. Roast on low to medium heat till golden and crisp. Keep aside.
  • STEP 2.Preheat another pan and add 3 cups grated ash gourd. Saute for 10 to 15 minutes till water evaporates.
  • STEP 3.Then add 1 cup sugar and ½ tsp cardamom (elaichi) powder and a few strands of saffron. Stir and mix well together until sugar melts.
  • STEP 4.Continue to stir and cook till halwa thickens. This will take upto 15 minutes.
  • STEP 5.At this stage add 2 tbsp ghee and stir it in. Cook for 8 to 10 minutes, stirring until the halwa leaves the sides of the pan.
  • STEP 6.Serve hot. Garnish with saffron strands and roasted cashew nuts.
