  • 1/4 Lemon Sized Tamarind
  • 1/2 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds
  • 0.13 teaspoon Fenugreek Seeds
  • as per your need A Few Curry Leaves
  • 1/4 Onion, Chopped
  • 1/2 Tomatoes, Chopped
  • as needed Assorted Vegetables
  • 0.13 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chili Powder
  • 1/2 teaspoon Coriander Powder
  • As required Salt To Taste
  • 1/2 tablespoon Grated Coconut
  • as needed Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Soak tamarind in warm water and extract the juice.
  • STEP 2.Heat oil in a pan and add mustard seeds, fenugreek seeds, and curry leaves.
  • STEP 3.Add chopped onions, tomatoes, and vegetables of your choice.
  • STEP 4.Add turmeric powder, red chili powder, coriander powder, and salt.
  • STEP 5.Pour in the tamarind juice and let it simmer for 10-15 minutes.
  • STEP 6.In a separate pan, roast grated coconut and grind it into a paste.
  • STEP 7.Add the coconut paste to the curry and cook for another 5 minutes.
  • STEP 8.Garnish with coriander leaves and serve hot with rice or dosa.

Cooking Tips

  • You can add vegetables like brinjal, drumstick, or ladies finger to enhance the flavor.
  • Adjust the spice level according to your preference by adding more or less chili powder.
  • For a thicker consistency, you can add a teaspoon of rice flour mixed with water.
