Ingredients for Kao Mun Gai Recipe

  • 3 piece skin on, bone in chicken thigh
  • 1 large skin on chicken breast
  • 2 teaspoon 2 salt
  • As required For the Rice
  • 1 cup 1⁄2 jasmine rice
  • 1 cup 2⁄3 chicken stock, unsalted, preferably homemade
  • 2 tablespoon chopped garlic
  • 2 tablespoon chopped ginger
  • 1 cup Optional: Extra chicken stock for serving on the side, about ⁄2 per person
  • As required Optional: Fresh cucumber slices for serving
  • As required For the Dipping Sauce
  • 1 inch knob ginger, finely chopped
  • 2 cloves garlic
  • 1 As required Thai chili, optional
  • 3 tablespoon Tao Jiew
  • 1 tablespoon Sugar
  • 2 teaspoon dark soy sauce
  • 2 teaspoon Soy Sauce
  • 1 teaspoon Vinegar
  • 3 sprig Cilantro

  • STEP 1.Trim fat and skin off your chicken thighs and reserve. You may get to render fat from these trimmings for the rice.
