  • 0.13 cup Rice
  • 0.06 cup Split Yellow Lentils
  • 1 cup Water
  • 1/4 tablespoon Oil
  • 1/4 teaspoon Mustard Seeds
  • 1/4 teaspoon Cumin Seeds
  • as needed A Few Curry Leaves
  • 1/2 Dried Red Chilies
  • 1/4 cup Chopped Vegetables
  • As required Salt To Taste
  • as per your need Fresh Coriander Leaves For Garnish

Cooking Directions

  • STEP 1.Wash and soak rice and lentils for 30 minutes.
  • STEP 2.In a large pot, add soaked rice and lentils along with water and bring to a boil.
  • STEP 3.Reduce the heat and simmer until the rice and lentils are cooked and the mixture thickens.
  • STEP 4.In a separate pan, heat oil and add mustard seeds, cumin seeds, curry leaves, and dried red chilies.
  • STEP 5.Once the spices splutter, add chopped vegetables and sauté for a few minutes.
  • STEP 6.Add the sautéed vegetables to the cooked rice and lentil mixture and simmer for a few more minutes.
  • STEP 7.Season with salt and garnish with fresh coriander leaves.
  • STEP 8.Serve hot and enjoy the comforting and nutritious kanji.

Cooking Tips

  • You can add a variety of vegetables like carrots, beans, peas, and spinach to enhance the flavor and nutritional value of the kanji.
  • Adjust the consistency of the porridge by adding more or less water according to your preference.
