Kanika is a mildly sweet fragrant rice flavored with some spices and ghee and loaded with cashew and raisins . It is a yellow coloured rice owing to the pinch of turmeric added to it . It is mostly prepared in odia households on the occasion of puja .It is one of the cooked items of the 56 dishes prepared as part of Mahaprasada or Chappan Bhoga in the Jagannath Temple.

Ingredients for Kanika Recipe

  • As required Ingredients-
  • 1/4 cup Basmati rice –
  • 1/2 nos Bay Leaves –
  • 1/4 nos Cinnamon stick –
  • 1/2 nos Green Cardamom –
  • 1 tbsp Clarified butter or ghee –
  • 0.13 tsp Salt –
  • 1/4 tsp Turmeric –
  • 0.08 cup Sugar –
  • As required Cashew nuts – handful
  • As required Raisins – handful
  • 1/2 cup Water –

Directions: Kanika Recipe

  • STEP 1.1.1 .Rinse well the basmati rice till the water is clear and soak it for 30 minutes .
  • STEP 2.2.Heat a pot . Add the clarified butter or ghee .
  • STEP 3.3.Stir fry the cashew and raisins on medium heat till golden brown with caution as it gets easily burned out .
  • STEP 4.3.Saute the cashew and raisins for a few secs .
  • STEP 5.4. Add the whole spices . In this case , add the cinnamon , bay leaf and cardamom .
  • STEP 6.5 .Once these releases the flavor in the clarified butter, add the rice and saute it till its translucent and shiny.
  • STEP 7. 6. Sauteing the rice .
  • STEP 8.7.Add the salt, turmeric and sugar and mix it to coat well. Do mix with caution, making sure no grains are broken.
  • STEP 9.8.Add 2 cups of water, cover it and let it cook on medium flame till the rice puffs and water dries out.
